ANALYSIS OF THE RESULTS OF STATE CONTROL OF RAW MEAT SAFETY IN UKRAINE IN 2016-2020

Introduction. Food safety is one of the decisive factors of the economic security of every country. In Ukraine, the manufacturer is responsible for food safety, but food safety control is the prerogative of the government within the framework of the functions and competencies of the State Service of Ukraine for Food Safety and Consumer Protection (SSUFSCP).

The goal of the work was analysis and generalization of the raw meat safety state control results at slaughterhouses and meat and poultry processing enterprises in Ukraine in 2016-2020.

Materials and methods. SSUFSCP’s veterinary statistical reporting data and regulatory documents on state control of food products of animal origin and live animals were used in the research as well as a statistically-analytical method for document analysis.

Results of research and discussion. In 2016-2020, under the veterinary examination, it was revealed: leukemia (1 131 animals), and tuberculosis in cattle (1 217 animals), cysticercosis (83 animals) and echinococcosis of farm animals (83138 animals), poultry salmonellosis (335 693 animals), fascioliasis (60 786 animals), dicroceliosis (15 304 animals) and dictyocaulosis (298 animals).

Conclusions and prospects for further research. SSUFSCP’s carries out effective state control of raw meat at slaughterhouses and meat processing plants – almost 3 billion animals have been examined. Cases of leukemia, tuberculosis of cattle, cysticercosis and echinococcosis of farm animals, salmonellosis of poultry, and parasitosis of ruminants – fascioliasis, dicroceliosis and dictyocaulosis were revealed.

Continuous analysis of statistical reporting data ensures a prompt and adequate response to changes in the epidemiological situation.

Keywords: government control, food safety, slaughtering, veterinary inspection, raw meat.
